Dhokla is that fluffy guilty pleasure we grab at every kitty party. Twist it for the day. Grind one cup rice and two teaspoons urad dal coarse. Stir in a quarter cup sour yogurt, enough warm water for thick batter. Separate bowl: one cup gram flour, half teaspoon turmeric, yogurt, water. Ferment both for three hours.

Add oil, lemon juice, pinch soda bicarb, salt to batters. Steam white first ten minutes. Blend three bunches coriander, one bunch mint, six-seven green chillies, ganthia half cup, sugar teaspoon, salt, lemon into chutney. Steam yellow khaman batter for fifteen minutes over a chutney layer. Temper mustard seeds, scatter on top. Slice. Serve hot. Soft inside, crisp edges. Perfect.

Sandwiches for brekkie, but make them flag-shaped. Four white bread slices. Grate half cup cabbage, half cup carrot. Three bowls: equal mayo, salt in each. One gets mint chutney, one schezwan, one plain. Butter every slice. Stack: green on bottom bread, plain middle, schezwan top, final slice seals it. Press. Cut triangles. Dip in extra mayo or ketchup.Kids devour these. Adults pretend it is healthy. Quick, no oven fuss.

Tacos with a Tiranga Twist

Tacos scream fusion fun. Go veg. Three shells dyed saffron, white, green. Marinate 150g paneer in white pepper, salt, and olive oil for half an hour. Stuff with lettuce 50g, red bell pepper 50g, yellow 50g. Top cheese dip 150g. Bake or grill till bubbly. Ketchup side.

Appreciation guaranteed. Guests go "wah, creative!"

These dishes are dead simple, forgiving if you eyeball measures. Use food colours if lazy, but natural hits better.
