People are particularly obsessed with the dessert Roti Sai Mai. Roti Sai Mai is a traditional Thai dessert, believed to have originated in the Ayutthaya Kingdom. It is also known as "Thai-style Cotton Candy". Roti Sai Mai, also called ortiisaayaihm, means sweet angel's hair. It is a vibrant and delicious dessert that uses cotton candy wrapped in thin, Pandan-flavoured crepes. This dessert is sold at a variety of kiosks along Ayutthaya's main highway. It has been a signature snack in the province. Many people will even argue that there is no better dessert than this one. Roti Sai Mai refers to a dessert made by wrapping 'Sai Mai’ in ‘Roti'. The name will tell you what kind of dessert it's. The thin bread that is common in Asia, called 'Roti,' is the first thing to notice. It has a pancake base that is made from flour. The 'Sai Mai" is made from sugar. After spreading the ‘Roti' thinly on a flat surface, a ‘Sai Mai' is placed over it and then rolled in two. The unique texture and sweet flavour make everyone fall in love with this dessert. It is amazing to see the number of Roti Sai Mai vendors along roads throughout Ayutthaya. Ironically, some people call these roads "Silk Road", as Sai Mai means silky threads. The technique of making Roti Sai Mai was discovered by Mr. Pia Sagarun accidentally when he made sugar syrup to top traditional crispy roti. He left the sugar syrup on the stove for too long, and it became too hard. He tried to soften the sugar syrup by stretching it, but it was impossible to do so. Then he realized that he could make fine threads of silk from it. This sweet crepe is an adaptation of the traditional Indian roti, with minor modifications to complement the unique filling. You can choose from a variety of flavours, including Blueberry, Strawberry, Taro, Banana, and Blueberry. Roti or crepe dough are made with wheat flour or a combination of tapioca starch, all-purpose flour, salt, and water. It is fascinating to watch the entire process of making Roti Sai Mai. The work that goes into making Roti Sai Mai will make this snack more enjoyable and delicious.
