- Greek Salad
What you need:
- 3 large tomatoes, chopped into small pieces
- 1/2 head romaine lettuce, chopped finely
- 2 cucumbers, quartered
- 1 red onion, chopped finely
- 1 green bell pepper, chopped finely
- 1 red bell pepper, chopped finely
- A handful of pitted black olives
- Juice of 1 lemon
- 1 tablespoon apple cider vinegar
- 2 tablespoons of olive oil
- 1 teaspoon of dried oregano
- Salt and pepper to taste
- Add all the veggies to a salad bowl and mix.
- Whisk the dressing and let it sit for a few minutes. Pour over the vegetables.
- Toss well, and you are done!
- Three Beans Salad
What you need:
- 1 cup pre-soaked and boiled black eyed peas
- 1 cup pre-soaked and boiled chickpeas
- 1 cup pre-soaked and boiled kidney beans
- 1/4th cup sprouts
- 1 red onion, finely chopped
- 1 tablespoon parsley and rosemary, finely chopped
- 2 tablespoons lemon juice
- 2 tablespoons olive oil
- ½ tablespoon apple cider vinegar
- Salt and pepper as required
- Add all the ingredients to a large bowl and mix.
- Pour the dressing over it and mix.
- Add the salt and pepper. Serve!
- Raw Papaya Salad
What you need:
- 1 medium papaya, raw
- One cup cherry tomatoes, quartered
- 3 tablespoons roasted peanuts
- 1 tablespoon mint leaves, finely chopped
- 2½ tablespoons Thai sweet chilli sauce
- 2 tablespoons lemon juice
- Salt and pepper as required
- Slice the papaya into super thin pieces. Add to a large bowl.
- Add the cherry tomatoes, peanuts and mint leaves to it.
