  • 1 red onion, chopped finely
  • 1 green bell pepper, chopped finely
  • 1 red bell pepper, chopped finely
  • A handful of pitted black olives
Dressing:
  • Juice of 1 lemon
  • 1 tablespoon apple cider vinegar
  • 2 tablespoons of olive oil
  • 1 teaspoon of dried oregano
  • Salt and pepper to taste
How to make:
  1. Add all the veggies to a salad bowl and mix.
  2. Whisk the dressing and let it sit for a few minutes. Pour over the vegetables.
