What you need:

  • 3 large tomatoes, chopped into small pieces
  • 1/2 head romaine lettuce, chopped finely
  • 2 cucumbers, quartered
  • 1 red onion, chopped finely
  • 1 green bell pepper, chopped finely
  • 1 red bell pepper, chopped finely
  • A handful of pitted black olives

Dressing:

  • Juice of 1 lemon
  • 1 tablespoon apple cider vinegar
  • 2 tablespoons of olive oil
  • 1 teaspoon of dried oregano
  • Salt and pepper to taste

How to make:

  1. Add all the veggies to a salad bowl and mix.
  2. Whisk the dressing and let it sit for a few minutes. Pour over the vegetables.
  3. Toss well, and you are done!

Bonus: You can add crumbled cheese to the salad for some extra yumminess.

  • 1 tablespoon parsley and rosemary, finely chopped

Dressing:

  • 2 tablespoons lemon juice
  • 2 tablespoons olive oil
  • ½ tablespoon apple cider vinegar
  • Salt and pepper as required

How to make:

  1. Add all the ingredients to a large bowl and mix.
  2. Pour the dressing over it and mix.

  • 1 medium papaya, raw

  • 2½ tablespoons Thai sweet chilli sauce
  • 2 tablespoons lemon juice
  • Salt and pepper as required

How to make: 

  1. Slice the papaya into super thin pieces. Add to a large bowl.
  2. Add the cherry tomatoes, peanuts and mint leaves to it.

3. Add the dressing to it and mix. Let it sit for a couple of minutes. Then, pour over the salad. Best served chilled!
